Instructions

Season the pork tenderloin well with salt and pepper.

Heat a frying pan over medium high heat.

Add butter and sage leaves to the pan.

Brown the tenderloin for 2 to 3 minutes on each side, until golden.

Place the meat in an ovenproof dish.

Finish in the oven at 160 degrees for 10 to 15 minutes, until the core temperature reaches 68 degrees.

Let the tenderloin rest for 5 minutes before slicing.
