Whole-roasted Moose Sirloin

Instructions

Season the moose sirloin well with salt and pepper.

Heat sunflower oil and 4 tbsp butter in a frying pan over high heat.

Brown the meat quickly on all sides until it has an even crust.

Place the small potatoes in an ovenproof dish and place the moose sirloin on top.

Pour the pan fat over the meat and potatoes.

Roast in the oven at 140 degrees until the meat reaches a core temperature of 55 degrees.

Remove the meat from the oven and let it rest for at least 10 minutes before slicing.

Strain the juices from the dish into a saucepan and add the meat stock.

Bring to a boil and let the sauce reduce slightly.

Stir the cornstarch into a little cold water and whisk it into the sauce.

Cook until the sauce has the desired consistency and stir in 1 tbsp butter at the end.

Season with salt and pepper.

Stir the lingonberries and sugar together until the sugar starts to dissolve.

Serve the moose sirloin in slices with potatoes, gravy and stirred lingonberries.

Let the moose sirloin rest well before slicing. Lean game meat keeps its juices better when it has time to settle after roasting.
