Instructions

Wash the mussels well in cold running water.

Discard broken mussels and mussels that do not close when tapped.

Finely chop fennel, celery, shallots and garlic.

Melt butter in a large saucepan over medium heat.

Add the vegetables and cook for a couple of minutes, until glossy.

Add mussels and white wine to the saucepan.

Cover with a lid and steam for 3 to 5 minutes, until the mussels open.

Discard mussels that do not open.

Season the broth with lemon juice, salt and pepper.

Serve the mussels with the broth from the saucepan.

Tips & tricks
