Instructions
Add flour, salt, dry yeast, olive oil and water to a stand mixer. Knead the dough for at least 10 minutes, until smooth and elastic.
Cover the bowl with plastic wrap or a cloth, and let the dough rise for about 1 hour, until roughly doubled in size.
Divide the dough into 3 to 4 pieces and roll or press them into thin pizza bases.
Cut the zucchini into large pieces and add it to a food processor with basil, garlic, lime juice, salt and pepper. Blend to a smooth purée.
Fold the crème fraîche into the zucchini purée until you have a smooth pizza sauce.
Spread the sauce over the pizza bases and top with grated cheese, tomato and red onion.
Bake the pizza at 250 degrees for 8 to 10 minutes in a regular oven, or for 2 to 3 minutes in a pizza oven, until the base is crisp and the cheese has melted.
Top the pizza with fresh basil before serving.

Tips & tricks
Squeeze out a little liquid from the zucchini if it seems very watery. This makes the sauce richer and helps the pizza base stay crisper during baking without the topping making it heavy.
