Instructions
Cook tagliatelle in plenty of salted water until al dente.
Save some of the pasta water before draining.
Clean the mushrooms and cut them into cubes or slices.
Heat olive oil in a frying pan.
Cook the mushrooms over medium heat for a couple of minutes, until they start to color.
Add finely chopped shallot and garlic.
Cook for about 5 minutes, until the onion is soft.
Pour in cream and add grated Parmesan.
Bring quickly to a boil and stir until the sauce becomes creamy.
Fold in truffle oil and cooked pasta.
Loosen with a little pasta water if the sauce becomes too thick.
Season with salt and pepper before serving.
