Steak with Pepper Sauce

Instructions

Take the sirloin out of the refrigerator about 30 minutes before cooking.

Dry the meat with paper towels and cut it into portions if desired.

Season the steaks well with flaked salt and freshly ground pepper on both sides.

Heat a frying pan over medium high heat and melt the butter.

Add the steaks when the butter is hot.

Cook the steaks for 2 to 3 minutes on each side, depending on thickness and desired doneness.

Transfer the steaks to a plate and let them rest for 5 minutes.

Add coarse ground pepper and pickled green pepper to the same pan.

Let the pepper cook in the pan fat for about 30 seconds.

Pour in the cream and stir well at the bottom of the pan to loosen the browned flavor.

Let the sauce simmer over medium low heat for 3 to 5 minutes, until lightly thickened.

Season with flaked salt and more pepper if needed.

Return the steaks to the pan just before serving and let them sit in the sauce for 1 to 2 minutes.

Serve the steak with plenty of pepper sauce.

Tips & tricks

Do not boil the steak in the sauce for long after cooking it. Let it only warm through so the meat does not lose the doneness you worked for.

Pepper sauce gets the most depth when made in the same pan as the steak because the browned flavor on the bottom dissolves into the cream. Green pepper adds aromatic and slightly fruity heat, while freshly ground pepper adds warmth. When the steak rests before going into the sauce, the meat stays more tender.
