Instructions

Lightly whisk the eggs with salt, pepper and chili flakes until yolks and whites are mixed.

Rinse the lamb's lettuce and dry it well.

Cut the cucumber into thin slices or sticks.

Toss lamb's lettuce and cucumber with olive oil and lemon juice in a bowl.

Heat a frying pan over medium low heat and melt the butter until it bubbles lightly.

Pour the egg mixture into the pan and let it spread evenly.

Let the omelette cook gently without stirring, until the surface is still slightly moist but almost cooked through.

Place the salad mixture on one half.

Carefully fold the omelette over the filling.

Leave the omelette in the pan for 20 to 30 seconds before serving, so it is heated through while the salad stays crisp.
