Smash Burger with Cheese and Caramelized Onions

Instructions

Add ground beef, salt and pepper to a bowl.

Mix well and shape into portions of about 100 g each.

Cut the onion into strips.

Add onion, butter, sugar and water to a frying pan.

Cook the onion over medium heat until soft, golden and caramelized.

Mix mayonnaise, ketchup, finely chopped pickles, Dijon mustard and Worcestershire sauce.

Season the burger sauce with salt and pepper.

Heat a frying pan to high heat and add butter.

Place the meat portions in the pan and press them completely flat.

Cook for about 1 minute on each side.

Place cheddar on the burgers and cover with a lid until the cheese melts.

Warm the burger buns lightly in the pan.

Assemble the burgers with burger sauce, smash burger, caramelized onion and buns.

Tips & tricks

Press the burger down firmly as soon as it hits the pan, but do not keep pressing after the crust has formed. This helps it keep more of its juices.
