Did you know?
Pork neck chops have a good amount of fat and connective tissue, which makes them especially tender when cooked slowly at low heat. Browning first gives more flavor, while foil traps steam and juiciness. Potatoes, onion, parsnip and stock create natural pan juices with the meat.
