Instructions

Add salt, pepper, garlic, olive oil, lemon zest and lemon juice to a mortar.

Crush into a rough marinade.

Rub the kid goat leg well with the marinade.

Let the meat marinate on the counter for 1 hour, or covered in the refrigerator overnight.

Place the kid goat leg on a baking tray or in an ovenproof dish.

Roast at 130 degrees for about 3 hours, until the meat is tender.

Turn on the grill element for the last 10 minutes if desired for more crust.

Let the meat rest before slicing.
