Peel the potatoes and cut them into pieces.
Boil the potatoes in plenty of water for 15 to 20 minutes, until tender.
Drain the water.
Add butter and milk.
Mash the potatoes to the desired consistency.
Season with salt and pepper and keep the mash warm.
Finely chop the shallot and slice the mushrooms.
Heat butter and olive oil in a frying pan.
Cook shallot and mushrooms over medium high heat for 8 to 10 minutes, until the mushrooms get good color.
Season with salt and pepper.
Season the salmon with salt and pepper.
Fry the salmon in butter over medium high heat for 3 to 4 minutes on each side, until it has a golden surface and juicy center.
Serve the salmon with mashed potatoes, fried mushrooms and finely chopped chives.
