Instructions

Finely chop garlic and rosemary.

Mix garlic and rosemary with olive oil, salt and pepper.

Tie the lamb roast with kitchen twine if it needs to hold its shape.

Brush the lamb roast well with the marinade.

Place the roast in the air fryer and cook at 200 degrees for about 8 minutes, until it gets a golden crust.

Lower the temperature to 150 degrees and cook for about 60 minutes, until the core temperature is around 65 degrees.

Let the meat rest before slicing.

Peel carrot and rutabaga, and cut them into pieces.

Wrap the vegetables in aluminum foil with butter and a little water.

Place the packet in the air fryer and cook until the vegetables are tender.

Transfer the vegetables to a bowl.

Add cream and blend into a smooth and creamy root mash.

Season the root mash with salt and pepper.

Melt butter in a saucepan.

Stir in flour and let the mixture turn lightly golden.

Gradually add game stock while stirring.

Bring to a boil and let the sauce simmer for a few minutes, until thickened.

Season with salt and pepper.

Serve the lamb roast in slices with root mash and sauce.
