Roast Beef with Fries and Truffle Aioli

Instructions

Season the beef sirloin well with salt and pepper on all sides.

Heat a frying pan over high heat with sunflower oil and butter. Brown the meat well on all sides.

Transfer the meat to a baking tray and roast in the oven at 120 degrees until the core temperature reaches 60 degrees.

Let the meat rest before slicing thinly.

Peel the potatoes and cut them into thin sticks. Place the potato sticks in cold water for a few minutes.

Dry the potatoes thoroughly.

Heat sunflower oil to 160 degrees and fry the potatoes in batches until pale and tender.

Increase the oil temperature to 180 degrees and fry the potatoes again until crisp and golden. Drain and sprinkle with flaked salt.

Add sunflower oil, egg yolks, Dijon mustard, truffle oil and roasted garlic to a narrow container that fits a hand blender.

Place the hand blender at the bottom of the container, start blending and lift it slowly upward until the aioli becomes thick.

Season the truffle aioli with lemon juice, salt and pepper.

Serve sliced roast beef with fries and truffle aioli.

Tips & tricks

Let both the meat and fries rest in the right way: the meat before slicing, and the fries on paper after frying. This gives a juicier, crisper and less greasy serving.
