Instructions
Take the pork tenderloin out of the refrigerator a little before cooking.
Season the meat well with salt and pepper.
Heat butter in a frying pan with sage leaves.
Brown the tenderloin for 2 to 3 minutes on each side, until it gets a good crust.
Place the meat in an ovenproof dish.
Finish in the oven at 160 degrees for 10 to 15 minutes, until the core temperature is about 68 degrees.
Let the tenderloin rest for 5 minutes before slicing.
Pour apple juice into the same frying pan and bring to a boil.
Stir cornstarch with a little cold water if needed, and add to the pan.
Let the sauce simmer for about 3 minutes, until lightly thickened.
Stir in butter and season with salt and pepper.
Peel the almond potatoes and boil until tender.
Drain and mash the potatoes with cream and butter.
Season the mashed potatoes with salt and pepper.
Serve the pork tenderloin with apple sauce and mashed potatoes.
