Instructions
Finely chop the shallots.
Add pork mince, flaked salt, freshly ground pepper, nutmeg, shallots, cream, potato starch and egg to a stand mixer.
Mix well until you have an even meat mixture.
Shape the mixture into meatballs with a damp spoon or damp hands.
Heat butter in a frying pan over medium high heat.
Cook the meatballs for 2 to 3 minutes on each side, until well browned.
Set the meatballs aside while you make the sauce.
Melt butter in the same pan with the pan fat.
Add flour and brown it while stirring.
Gradually add meat stock while stirring, until you have a smooth brown sauce.
Bring to a boil and season with salt and pepper.
Return the meatballs to the sauce.
Let them simmer for 10 to 15 minutes, until cooked through.
Serve with boiled potatoes and stirred lingonberries.
