Instructions
Start the preparations 2 to 3 days before serving.
Score the rind well down into the fat layer, but not into the meat.
Cover the bottom of a dish with coarse salt.
Place the pork belly rind side down against the salt.
Season the meat side with salt and freshly ground pepper.
Cover the dish and refrigerate until cooking day.
Rinse off the salt and dry the pork belly very well.
Sprinkle a thin layer of salt over the rind side.
Make a small raised support in the air fryer basket with aluminum foil.
Place the pork belly on top, so the middle is highest.
Pour 2 dl water into the bottom of the air fryer if your model allows liquid in the bottom.
Cook the pork belly at 150 degrees for about 2 hours.
Increase the temperature to 230 degrees and cook for another about 20 minutes, until the crackling pops and becomes crisp.
Watch closely towards the end so the crackling does not burn.
Let the pork belly rest for at least 15 minutes before slicing.

Watch closely when the temperature is increased at the end. Crackling can go quickly from crisp to burned in the air fryer.

Ribbe in the air fryer works best in smaller pieces because the concentrated heat gives good control over both meat and crackling. Dry rind, proper support and high heat at the end are essential for a crisp surface. Salting ahead gives better flavor.
