Instructions
Add tipo 0 flour, salt, dry yeast, olive oil and water to a stand mixer.
Knead the dough for at least 10 minutes, until smooth and elastic.
Cover the bowl with plastic wrap or a cloth.
Let the dough rise for about 1 hour, until doubled in size.
Divide the dough into 3 to 4 pieces.
Roll or press the pieces into thin pizza bases.
Finely chop shallots and garlic.
Take one tablespoon of the olive oil from the pizza dough and heat it in a saucepan.
Cook the shallots in the oil until soft and glossy.
Add garlic and cook for another 1 minute.
Add canned tomatoes and sugar.
Let the sauce simmer for 15 to 20 minutes, until thickened with a round flavor.
Season with salt and pepper.
Spread tomato sauce on the pizza bases.
Top with grated cheese, grated Parmesan and sliced mozzarella.
Bake at 250 degrees for 8 to 10 minutes in a regular oven, or 2 to 3 minutes in a pizza oven.
Top with basil just before serving.

Tips & tricks
Do not use too much tomato sauce on the base. A thin layer gives a crisper pizza and lets the mozzarella and basil come through more clearly.
