Instructions
Cook linguine in plenty of salted water until al dente. Save some of the pasta water before draining the rest.
Cut the chorizo into slices or small pieces.
Fry the chorizo in a dry frying pan over medium high heat until crisp and it releases fat.
Toss the hot pasta with butter and grated Parmesan.
Add a little pasta water and toss until the sauce becomes glossy and creamy around the pasta.
Fold in the chorizo and the fat from the pan.
Top with more grated Parmesan and freshly ground pepper before serving.

Tips & tricks
Use a little less salt in the pasta water if the chorizo is very salty. This makes it easier to balance the dish when Parmesan and the pan fat also add lots of flavor.

Chorizo gives pasta a lot of flavor quickly because the sausage releases spiced fat in the pan as it crisps. This fat almost works as a sauce base together with butter, Parmesan and pasta water. When the starch from the pasta water binds with the cheese, the dish gets a creamy texture without cream.
