Instructions

Cut the cucumber into thin strips with a vegetable peeler or cheese slicer. Stir together water, sugar, vinegar, salt and freshly ground pepper, pour the brine over the cucumber and let it sit for at least 15 minutes.

Cut the cauliflower into florets and boil it in lightly salted water for about 15 minutes, until completely tender. Drain well.

Add cream and butter to the hot cauliflower. Blend until smooth with an immersion blender and season with salt and pepper.

Cut the salmon into four even pieces and season with salt and pepper. Heat butter in a frying pan over medium high heat.

Place the salmon in the pan and cook for about 3 minutes on each side, until it has a nice crust and is just cooked through. Pour over the lemon juice just before serving.

Serve the pan fried salmon with cauliflower purée and tangy cucumber salad.
