Instructions
Peel the potatoes and boil them in lightly salted water until tender.
Drain the water and let the potatoes steam dry under a lid until serving.
Cut the cod into even portions.
Pat the fish lightly dry with paper towels.
Season the cod with salt and pepper on both sides.
Heat a large frying pan over medium heat and melt half of the butter.
Carefully place the fish in the pan.
Fry the cod gently for 3 to 4 minutes on the first side.
Turn the fish carefully and cook for another 3 to 4 minutes, until it flakes easily.
Remove the fish from the pan and set aside.
Rinse the leek well and finely chop it.
Add the remaining butter to the same pan.
Sprinkle over flour and stir well for about 30 seconds without browning.
Gradually add cream while stirring, until the sauce becomes smooth.
Stir in sour cream.
Add leek and let the sauce simmer for 2 to 3 minutes.
Season with lemon juice, salt and pepper.
Return the fish to the sauce and let it poach gently for 1 to 2 minutes.
Serve with boiled potatoes.
