Peel the potatoes and boil them in lightly salted water until tender.

Cut the cod into even portions.

Pat the fish lightly dry with paper towels.

Season the cod with salt and pepper on both sides.

Heat a large frying pan over medium heat and melt half of the butter.

Carefully place the fish in the pan.

Fry the cod gently for 3 to 4 minutes on the first side.

Turn the fish carefully and cook for another 3 to 4 minutes, until it flakes easily.

Add the remaining butter to the same pan.

Sprinkle over flour and stir well for about 30 seconds without browning.

Gradually add cream while stirring, until the sauce becomes smooth.

Tips & tricks

Pat the cod dry before frying. A dry surface gives better browning and less liquid in the sauce afterward.

Did you know?

Cod in sour cream sauce is a classic combination because the mild fish handles a creamy and slightly tangy sauce well. Leek adds gentle onion sweetness, while lemon makes the sauce fresher. When the fish poaches briefly in the sauce, it stays juicy.
