Instructions
Cook the lasagna sheets in well salted water until al dente.
Cut the asparagus into pieces.
Place the asparagus in a frying pan with some of the butter and a little water.
Steam the asparagus for 4 to 6 minutes, until tender but still slightly crisp.
Brown the remaining butter in a small saucepan over medium heat until nut brown and aromatic.
Toast the pine nuts lightly in a dry pan.
Finely grate lemon zest and squeeze out a little lemon juice.
Layer lasagna sheets, asparagus, browned butter and burrata on plates.
Top with toasted pine nuts, a little lemon juice and grated lemon zest before serving.
