Instructions
Lightly whisk the eggs with salt and pepper in a bowl, until yolks and whites are mixed.
Finely chop chives and parsley.
Stir the herbs into the egg mixture.
Heat a frying pan over medium low heat and melt the butter without browning.
Pour the egg mixture into the pan and let it spread evenly.
Let the omelette cook gently without stirring, so it gradually sets from the edges inward.
When the surface is still slightly moist but almost cooked through, add grated or finely chopped cheese over one half.
Carefully fold the omelette over the cheese.
Leave it in the pan for 30 to 60 seconds, until the cheese starts to melt and the omelette is just heated through.
Serve immediately.
