Instructions
Mix flour and salt in a bowl.
Add half of the milk and whisk into a lump free batter.
Whisk in the rest of the milk.
Add the eggs and whisk until smooth.
Let the pancake batter rest for about 30 minutes.
Melt a little butter in a frying pan over medium heat.
Pour a ladle of batter into the pan and gently tilt the pan so the batter spreads evenly.
Cook the pancake until set on top and golden underneath.
Turn the pancake and cook briefly on the other side.
Place the pancake on a platter with a lid or foil while cooking the rest.
Fry the salted pork belly in a dry pan until crisp.
Serve the pancakes with crisp pork belly and a little pan fat.
