Instructions
Remove the outer leaves from the cabbage and cut the cabbage into large wedges. Place the cabbage wedges in the air fryer and cook at 180 degrees for 8 minutes, until lightly browned.
Place the lamb pieces in the air fryer and season with some of the salt and whole pepper. Cook at 200 degrees for 12 minutes, until the meat has a golden surface.
Peel the parsley roots and cut them into large pieces. Lightly crush the garlic cloves and prepare the rosemary sprig.
Layer the meat, cabbage, parsley root, garlic and rosemary in a large pot. Sprinkle salt, whole pepper and flour between the layers so the flavor is evenly distributed.
Pour the water into the pot and cover with a lid. Bring to a boil, reduce the heat and let the fårikål simmer gently for about 3 hours, until the meat is very tender and pulls easily from the bone.

Tips & tricks
You can make the fårikål the day before serving. The flavor often becomes rounder overnight in the refrigerator, and the dish can be gently reheated in the pot with a little extra water or stock if it has become too concentrated.
Did you know?
Fårikål is one of Norway's best known traditional dishes, and the simple combination of lamb or mutton, cabbage and whole pepper lets the ingredients take the lead. Browning the meat and cabbage in the air fryer first gives the dish more depth, more caramelized aroma and a clearer contrast to the mild broth that forms in the pot.
