Finely chop the shallots.
Add ground pork, flaked salt, pepper, nutmeg, shallots, cream, potato starch and egg to a stand mixer. Mix into an even filling.
Carefully loosen the cabbage leaves from the cabbage head. Boil the leaves in lightly salted water for about 1 minute.
Transfer the cabbage leaves directly to ice cold water to stop the cooking. Dry the leaves well.
Place a suitable amount of filling on each cabbage leaf and roll up so the cabbage covers the filling completely.
Place the cabbage rolls in an ovenproof dish and pour a little water into the bottom. Cover the dish tightly with aluminum foil.
Bake the cabbage rolls at 200 degrees for about 30 minutes, until the filling is cooked through.

Tips & tricks
Trim away the thickest part of the stem on each cabbage leaf if the leaves are stiff. This makes them easier to roll neatly and gives the cabbage rolls a more even shape in the dish.
