Instructions

Prepare the fries in the oven, air fryer or deep fryer according to the package instructions.

Rinse the mussels well under cold running water.

Discard broken mussels and mussels that do not close when tapped lightly.

Finely chop garlic, shallots, fennel and celery.

Melt butter in a large pot over medium heat.

Add the vegetables and cook for a couple of minutes, until glossy.

Add mussels and white wine.

Cover with a lid and steam for 3 to 5 minutes, until the mussels have opened.

Lift the mussels out of the pot and discard any that have not opened.

Add cream to the cooking liquid and reduce to the desired thickness.

Season with lemon juice, salt and pepper.

Return the mussels to the pot.

Sprinkle with spring onion.

Serve the mussels with fries and aioli.

Tips & tricks

Serve the fries on the side, not in the pot. This keeps them crisper and gives better contrast to the mussels and sauce.

Moules frites is built on the contrast between salty mussels, aromatic broth, crisp fries and creamy aioli. The mussels create much of the flavor themselves when steamed with white wine and vegetables. When the broth is reduced with cream, it becomes a sauce worth eating with bread or fries.
