Instructions

Peel the root vegetables and cut them into even pieces.

Place the vegetables in an ovenproof dish, add butter and season with salt and pepper.

Bake the vegetables at 200 degrees for about 30 minutes, until tender and lightly golden.

Mash lingonberries and sugar together with a fork until the sugar starts to dissolve.

Cut the moose meat into four equal pieces.

Season the meat well with salt and pepper.

Heat butter in a frying pan over high heat.

Cook the moose steaks for 2 to 3 minutes on each side, depending on thickness and desired doneness.

Set the meat aside and let it rest before slicing.

Finely chop shallots.

Melt butter in a saucepan and cook the shallots until glossy.

Add red wine and reduce by half.

Add green peppercorns and pan juices.

Let the sauce simmer until about one third of the liquid has evaporated.

Mix cornstarch with a little cold water and whisk it into the sauce.

Season with salt and pepper.

Serve the moose steak with oven baked vegetables, green pepper sauce and stirred lingonberries.
