Add ground moose meat and salt to a bowl.
Knead well until the mixture becomes stickier.
Add freshly ground pepper, nutmeg, potato starch, flour and egg.
Mix the meat mixture together.
Add cream in 2 to 3 additions and mix well between each one.
Shape the mixture into patties.
Heat butter in a frying pan over high heat.
Cook the patties for 2 to 3 minutes on each side, until well browned and cooked through.
Set the patties aside.
Cut the onions into strips.
Melt more butter in the pan and add onion, sugar and water.
Let the onion cook and reduce until soft, golden and caramelized.
Serve the moose patties with caramelized onions.
