Instructions

Cut the cauliflower into small florets.

Slice the stem if desired so everything cooks evenly.

Heat a large frying pan over medium heat and melt 50 g butter.

Add cauliflower to the pan and cook gently for 8 to 10 minutes.

Add broccolini when about 4 minutes remain.

Season lightly with salt towards the end and keep the vegetables warm.

Bring a large pot of water and salt to a boil.

Lower the heat so the water barely simmers.

Carefully place the cod in the water.

Let the fish poach for 8 to 10 minutes, until it flakes easily.

Lift the fish out with a slotted spoon and let it drain well.

Bring the cream for the sauce to a boil and reduce by about half.

Remove the pan from the heat.

Whisk in cold butter in cubes, little by little.

Season with lemon juice and a little salt if needed.

Serve the cod with butter fried cauliflower, broccolini and butter sauce.
