Instructions
Start with the meat sauce.
Finely chop onion and garlic.
Peel the carrot and grate it finely.
Heat olive oil in a large frying pan over medium heat.
Cook onion and garlic for 2 to 3 minutes, until soft and glossy.
Add grated carrot and cook for a couple of minutes.
Add minced beef to the pan and cook until browned and crumbled.
Stir in tomato paste and cook for 1 minute.
Add chopped tomatoes, thyme, sugar, salt and pepper.
Let the meat sauce simmer for 10 to 15 minutes, until rich.
Melt butter in a saucepan over medium heat.
Stir in flour and cook for 1 to 2 minutes without browning.
Gradually add milk while whisking, until the sauce is smooth.
Let the sauce simmer for 5 minutes.
Stir in Parmesan, nutmeg, salt and pepper.
Grease an ovenproof dish.
Layer meat sauce, lasagna sheets and white sauce in the dish.
Finish with white sauce and grated cheese on top.
Bake in the middle of the oven at 200 degrees for 30 to 35 minutes, until golden and cooked through.
Let the lasagna rest for 10 to 15 minutes before serving.
