Cut the tomatoes into medium pieces.
Peel the cucumber, cut it in half and scrape out the soft center.
Cut the cucumber into pieces.
Finely chop red onion, mint and parsley.
Cut the olives in half and remove any stones.
Mix tomato, cucumber, red onion, olives, feta cheese, lemon zest, lemon juice, olive oil, mint and parsley in a bowl.
Season with salt and pepper.
Warm the lamb quickly in a frying pan over high heat.
Warm the tortilla wraps briefly.
Fill the wraps with lamb and the vegetable mixture.
Roll up and serve.
