Instructions
Cook the macaroni according to the package instructions. Drain and set aside.
Cut the cod into 2 to 3 cm cubes. Place the fish in a pot of lightly salted water, bring to a boil and reduce the heat. Let the fish poach for 8 to 10 minutes, until cooked through. Lift it out carefully and let it drain.
Melt the butter in a saucepan and stir in the flour until smooth. Gradually add the milk while whisking, and let the sauce simmer for about 5 minutes until thickened.
Season the sauce with nutmeg, salt and pepper.
Gently fold the cooked macaroni and cod into the sauce. Pour the mixture into an ovenproof dish.
Top the fish gratin with grated cheese and breadcrumbs.
Bake the gratin in the middle of the oven at 180 degrees for about 40 minutes, until golden on top.
Mix water, vinegar and sugar for the carrot salad while the gratin bakes. Grate the carrot and fold it into the dressing.
Serve the fish gratin warm with carrot salad on the side.
