Instructions

Make sure the fish, milk and egg are cold before you start.

Cut the fish into cubes.

Add fish and salt to a food processor and process into an even mixture.

Add finely chopped onion, potato starch and egg, and process briefly.

Gradually add cold milk while the machine is running.

Add white pepper and ground nutmeg, and mix briefly until the mixture is even.

Heat a frying pan with butter or oil.

Shape the fish cakes with a spoon and place them in the pan.

Cook the fish cakes for 3 to 4 minutes on each side, until golden and cooked through.
