Instructions
Make sure the fish, milk, egg and other ingredients are completely cold before starting.
Cut the fish into cubes.
Add fish and salt to a food processor.
Blend into a smooth and sticky fish mixture.
Add potato starch and egg, and blend briefly.
Gradually add cold milk while the machine runs.
Add white pepper and nutmeg, and mix briefly.
Bring a pot of lightly salted water to a boil.
Lower the heat so the water does not boil rapidly.
Shape fish balls with a spoon and place them gently in the water.
Let the fish balls poach for 10 to 15 minutes, until firm and heated through.
