Add tipo 00 flour and salt to a bowl.
Make a well in the middle and add eggs and egg yolks.
Gradually stir the eggs into the flour with a fork.
Knead the dough by hand for at least 5 minutes, until smooth.
You can also knead all the ingredients together in a stand mixer with a dough hook on low speed.
Wrap the dough in plastic wrap.
Let it rest in the refrigerator for at least 30 minutes.
Roll the dough thinly with a pasta machine or rolling pin, to about 1.5 mm thickness.
Cut the dough into squares of about 4 x 4 cm.
Pinch each square together in the middle to make the farfalle shape.
Place the pasta on a baking tray with a little flour.
Let the pasta air dry for about 30 minutes before boiling.
