Instructions
Rinse the mussels well in cold water.
Discard broken mussels and mussels that do not close when tapped lightly.
Finely chop garlic and fresh herbs.
Slice the spring onion thinly.
Save a little spring onion and herbs for topping.
Make a large foil packet with a double layer of foil.
Place the mussels in the center of the foil.
Add white wine, butter, garlic, herbs and spring onion.
Season lightly with salt and pepper.
Close the foil packet tightly.
Place the packet on the grill over high heat for about 12 to 15 minutes, until the mussels have opened.
Open the packet carefully, as the steam is very hot.
Discard mussels that have not opened.
Squeeze over lemon and top with the remaining herbs and spring onion before serving.
