Instructions
Cut the chicken thigh fillets into even pieces.
Whisk the eggs lightly in a bowl.
Coat the chicken pieces first in egg and then in cornstarch.
Heat sunflower oil in a frying pan over medium high heat.
Cook the chicken until golden and cooked through.
Transfer the chicken pieces to kitchen paper so excess oil drains off.
Add orange juice, soy sauce, sugar, apple cider vinegar, finely chopped garlic and grated ginger to a saucepan.
Bring to a boil and let the sauce simmer for a couple of minutes.
Mix cornstarch with cold water.
Whisk the slurry into the sauce and bring to a boil until thickened.
Add the chicken to the sauce.
Let everything simmer for a couple of minutes, until the chicken is coated in the glaze.
Serve with rice or your preferred side dish.
