Flounder with Steamed Cabbage and Caper Butter

Instructions

Cut the cabbage into wedges.

Add butter and water to a saucepan and bring to a boil.

Place the cabbage in the saucepan and cover with a lid.

Let the cabbage steam for 3 to 4 minutes, until tender but still slightly firm.

Season the cabbage with salt and pepper.

Dry the flounder fillets well and season with salt and pepper.

Heat sunflower oil in a frying pan over medium heat and add butter.

Cook the fish for 2 to 3 minutes on each side, until golden and just cooked through.

Lift the fish out of the pan.

Add capers and butter to the same pan and let it sizzle lightly.

Serve the flounder with caper butter, grated lemon zest, finely chopped chives and steamed cabbage.
