Instructions
Pound the chicken thigh fillets slightly flatter and season with salt and pepper.
Coat the chicken first in flour, then in beaten egg and finally back in flour.
Heat sunflower oil in a saucepan to about 180 degrees.
Fry the chicken for about 5 minutes, until golden, crisp and cooked through. Drain on kitchen paper.
Cut the shallots into thin strips and toss with cornstarch.
Fry the onions in the hot oil until golden and crisp. Drain on kitchen paper.
Stir together mayonnaise, sriracha, soy sauce, Dijon mustard and honey. Season with salt and pepper.
Warm the brioche buns lightly.
Assemble the burgers with dressing, crispy chicken, pickles and fried onions.
