Instructions

Heat the oven to 160 degrees top and bottom heat, and line a baking tray with parchment paper.

Separate the eggs. Place the egg whites in a clean bowl and the yolks in another bowl.

Add salt and baking powder to the egg whites. Whip to a stiff meringue that holds its shape well.

Stir the egg yolks together with cream cheese until smooth and lump free.

Gently fold the meringue into the egg yolk mixture in several additions with a spatula, keeping as much air as possible.

Shape small, round breads on the parchment paper with a spoon. Leave some space between them.

Bake in the middle of the oven for about 22 minutes, until lightly golden and firm on the surface.

Cool on a wire rack before serving so the texture can set.

Serve with butter and slices of cured ham.
