Instructions
Finely chop the onion and garlic. Cut the bell pepper into cubes.
Heat olive oil in a large pot. Cook onion and garlic over medium heat until soft.
Add the ground beef and brown the meat well while breaking it up with a spoon.
Add bell pepper and tomato paste, and cook for a couple of minutes.
Add canned tomatoes, rinsed and drained kidney beans, rinsed and drained white beans and beef stock.
Stir in cumin, paprika and chili powder.
Let the stew simmer over low heat for at least 30 minutes, until the flavor is rich and the texture has thickened slightly.
Stir occasionally and serve the stew warm.
