Season the chicken fillets with salt and pepper.
Heat a frying pan over medium high heat and melt the butter.
Cook the chicken for 2 to 3 minutes on each side, until golden.
Lower the heat, cover with a lid and cook for about 5 minutes, until the chicken is cooked through.
Let the chicken rest for a few minutes before slicing.
Rinse and dry gem lettuce and arugula.
Cut the red onion into thin slices and cut the lime into wedges.
Warm the whole wheat tortillas lightly if desired.
Spread aioli on the tortillas.
Fill with chicken, gem lettuce, arugula and red onion.
Squeeze over a little lime, roll up and serve.
