Season the chicken fillets well with salt and pepper.
Heat sunflower oil in a frying pan over medium high heat.
Brown the chicken well on both sides and set it aside.
Finely chop garlic and shallots.
Add butter to the same frying pan.
Add garlic and shallots, and cook until the onion is soft and glossy.
Pour in white wine and reduce to about half.
Add cream and bring to a boil.
Return the chicken to the sauce.
Let the dish simmer over low to medium heat for 8 to 12 minutes, until the chicken is cooked through and the sauce has thickened slightly.
Season with salt and pepper.
Top with finely chopped fresh tarragon just before serving.
