Instructions

Mix coconut milk and cream in a large bowl.

Add vanilla extract, finely grated lime zest and lime juice.

Whisk well until the mixture is completely smooth.

Add the chia seeds while whisking continuously, so the seeds distribute evenly.

Let the mixture sit on the counter for 10 minutes.

Whisk thoroughly once more to prevent lumps.

Cover the bowl or divide the mixture into serving glasses.

Refrigerate for at least 4 hours, preferably overnight, until the pudding is thick and creamy.

Stir the pudding lightly before serving.

Top with coconut flakes and fresh strawberries just before serving.
