Instructions

Mix coconut milk, vanilla extract, salt and honey in a bowl.

Whisk well until smooth.

Add the chia seeds while whisking so they distribute well.

Let the mixture sit for 10 minutes.

Stir thoroughly again to prevent the seeds from clumping.

Cover and refrigerate for at least 4 hours, preferably overnight, until the pudding has a thick and creamy consistency.

Coarsely chop the nuts.

Stir the pudding lightly before serving.

Divide the chia pudding into bowls and top with blueberries and nuts just before serving.
