Instructions

Lightly whisk the eggs with salt and pepper in a bowl.

Grate the cheese if it is not already grated.

Heat a frying pan over medium low heat and melt the butter without browning it.

Pour the egg mixture into the pan and let it spread evenly.

Let the omelette cook gently without stirring, until it starts to set from the edges inward.

Spread the cheese over one half when the surface is still slightly moist but almost cooked through.

Carefully fold the omelette over the cheese.

Leave the omelette in the pan for 30 to 60 seconds, until the cheese starts to melt and the omelette is just heated through.

Serve right away.

Tips & tricks
