Instructions

Cut the reindeer meat into rough cubes of about 3 cm.

Heat a large pot over medium heat and melt the butter.

Brown the meat well in batches so it gets a good seared surface.

Return all the meat to the pot.

Pour over game stock so the meat is just covered.

Bring to a boil, lower the heat and let the meat simmer covered for 30 minutes.

Stir flour into a little cold water until completely lump free.

Pour the slurry into the pot while stirring as the stock boils.

Peel potatoes, carrots and onion.

Cut potatoes and carrots into even cubes, and the onion into rough pieces.

Add the vegetables to the pot.

Let the bidos simmer for another about 20 minutes, until the meat is tender and the vegetables are cooked through.

Stir occasionally so nothing sticks to the bottom.

Season with salt and pepper.

Serve bidos piping hot in deep bowls, preferably with whole grain bread on the side.

Tips & tricks

Brown the meat in batches if the pot is small. Too much meat at once makes it boil instead of sear.
