Bellini with Peach and Prosecco

Instructions

Cut the peaches in half and remove the stones. Cut the flesh into large pieces.

Place the peach pieces in a blender with lemon juice and sugar. Blend to a smooth purée.

Strain the peach purée through a fine mesh sieve if you want a completely smooth drink.

Divide the purée between glasses and gently top with prosecco just before serving.
