Cut the rhubarb into slices and place it in a saucepan with the water. Bring to a boil and simmer for about 15 minutes, until the rhubarb has given flavor and color to the liquid.
Strain the liquid through a fine mesh sieve and return it to the saucepan.
Add the sugar and bring to a boil again. Let the syrup cook until it thickens slightly.
Cool the rhubarb syrup and pour it into a clean bottle. Store it in the refrigerator.
Use the syrup in cocktails, sparkling water, lemonade, desserts or over ice cream.
