Rinse the broccolini and trim away any tough ends. Cut the broccolini into smaller pieces.
Rinse the zucchini and cut it into half moons or thick sticks.
Dry the beef strips well with kitchen paper and season with salt, pepper and cayenne pepper.
Heat a large pan or wok over high heat. Melt 1 tablespoon butter and cook the beef strips in two batches for 1 to 2 minutes per batch, until well browned. Set the meat aside.
Reduce the heat to medium high and melt the remaining butter in the pan. Add the broccolini and cook for 3 to 4 minutes, until tender but still crisp.
Add the zucchini and cook for another 2 to 3 minutes.
Pour over the soy sauce and toss the vegetables well so the liquid reduces quickly.
Return the beef to the pan and toss everything together for about 1 minute, until the meat is heated through.
Season with more pepper or cayenne before serving if you want more heat.
